I’m going to keep this simple because well… this is a simple dish to make. While getting the right “taste” can be tricky, the actual steps are pretty easy.

What you’ll need

  • Goat meat (I used 3lbs)
  • Lots of garlic (I used about 10 cloves)
  • Thyme
  • Parsley
  • green onion
  • Sour orange
  • Vinegar
  • Lime
  • Salt
  • 2 Maggi cubes
  • 2 Habanero pepper
  1. Soak the goat meat overnight in white vinegar and salt
  2. The following day thoroughly clean the meat with lime, followed by sour orange (squeeze the juice into a separate container prior to cleaning), scrub the meant vigorously. This step is important because it will help mask the heavy “goat” smell
  3. Meanwhile, boils some water, with salt. Once the water has come to a boil (and you are done cleaning the goat), pour it over the cleaned goat meat. Allow to stand for 5 minutes.
  4. Remove the meat from the hot water and put into a deep pot. Fill with water.
  5. Add in garlic cloves, bouquet garni (thyme, flat leaf parsley, green onion… all tied together), Habanero peppers, cloves, salt, maggi cube, sour orange juice (I used 1/2 cup), 2 TBS of vinegar. taso
  6. Boil for an hour or until meat is tender. While the meat is boiling taste the broth (it should be flavorful, slightly acidic)
  7. Once the meat is fully cooked, remove from the liquid (you can reserve some of the liquid to make sauce).
  8. Fry the goat meat on medium heat in some Grape Seed oil or vegetable oil.Photobucket
