  • 2 lb Mahi Mahi (or any fish fillet)
  • 5 cloves garlic
  • White wine vinegar
  • 1 TBS of balsamic vinegar
  • 1/2 cup of water
  • 1/2 cup of light brown sugar
  • Allspice berries
  • 4 bay leaves
  • 2 Kaffir lime leaves
  • 1 TBS of curry powder
  • 2 tsp cumin, ground
  • 2 tsp coriander, ground
  • 1 tsp turmeric
  • 1 tsp of coarse salt
  • oil, as needed for frying

  1. sprinkle salt on the fish and allow to sit for 20 minutes. Then rinse the fish completely making sure to remove all the salt. Sprinkle a bit of the curry powder on both sides of the fish.Photobucket
  2. Heat oil in a frying plan, then fry the fish until cooked.Photobucket
  3. Roughly chop the garlic
  4. Peel and slice the onions
  5. Place the rest of the ingredients into the same pot that you fried the fish in, bring to a boil. Stir to ensure the sugar dissolves and does not burn on the bottom of the pot.Photobucket
  6. Simmer for approximately 10 minutes until the onions are cooked but still crisp.Photobucket
  7. Place the fish into a glass dish then pour sauce over it. If the dish is small layer the fish making sure that sauce goes in between each layer.
  8. Leave to cool and then refrigerate.

Serve over a bed of lettuce and sliced green apples
