- 2 lb Mahi Mahi (or any fish fillet)
- 5 cloves garlic
- White wine vinegar
- 1 TBS of balsamic vinegar
- 1/2 cup of water
- 1/2 cup of light brown sugar
- Allspice berries
- 4 bay leaves
- 2 Kaffir lime leaves
- 1 TBS of curry powder
- 2 tsp cumin, ground
- 2 tsp coriander, ground
- 1 tsp turmeric
- 1 tsp of coarse salt
- oil, as needed for frying

- sprinkle salt on the fish and allow to sit for 20 minutes. Then rinse the fish completely making sure to remove all the salt. Sprinkle a bit of the curry powder on both sides of the fish.
- Heat oil in a frying plan, then fry the fish until cooked.
- Roughly chop the garlic
- Peel and slice the onions
- Place the rest of the ingredients into the same pot that you fried the fish in, bring to a boil. Stir to ensure the sugar dissolves and does not burn on the bottom of the pot.
- Simmer for approximately 10 minutes until the onions are cooked but still crisp.
- Place the fish into a glass dish then pour sauce over it. If the dish is small layer the fish making sure that sauce goes in between each layer.
- Leave to cool and then refrigerate.
Serve over a bed of lettuce and sliced green apples
